I don't get this. Back in the days of no refrigeration, meat used to be hung - often for a very long time just wrapped in muslin to keep the flies off (and sometimes then not very well)
Meat has traditionally been dried in the air, and most salami's still are. Venison even used to be burried for a month then dug up!
Jars of honey are the same. It's a preservative itself - and was found to be still good in the tombs of Egypt - so why have a short date on it?
Blue Stilton cheese is one that is only sold when it is moldy - so what date do they put on that ?
Because of litigation. In our sue happy society, companies have put use-by dates or good-by dates on all food items. Before the use of Nutrasweet (aspartame), sodas did not have a use-by date. We how have them because aspertame has a short shelf life and turns into a caner causing agent when sitting on the shelf. Now all sodas have use-by dates. If you use the item after the date and get sick...its your own fault.
"Sell-By" date tells the store how long to display the product for sale. You should buy the product before the date expires.
"Best if Used By (or Before)" date is recommended for best flavor or quality. It is not a purchase or safety date.
"Use-By" date is the last date recommended for the use of the product while at peak quality. The date has been determined by the manufacturer of the product.
"Closed or coded dates" are packing numbers for use by the manufacturer.
Except for "use-by" dates, product dates don't always refer to home storage and use after purchase. "Use-by" dates usually refer to best quality and are not safety dates. But even if the date expires during home storage, a product should be safe, wholesome and of good quality — if handled properly and kept at 40° F or below. See the accompanying refrigerator charts for storage times of dated products. If product has a "use-by" date, follow that date. If product has a "sell-by" date or no date, cook or freeze the product by the times on the chart.
