Why do Nestle Toll House chocolate chip cookie dough bars start out square and then come out round?
I have a theory that it has to do with surface tension which keeps the cookie pieces stuck together while they are melting, allowing them to distibute the cookie dough evenly from the center (roughly). Another possibility is that they form them round and then press them square as a novelty, resulting in more dough being in the center of each side and causing it to "pop" back out when it is cooked. Anyone with any knowledge able to shed any light on the situation? I am especially keen to hear from any food scientists, chemists, or scientifically trained bakers with theories (or just the well informed amateur foodies). Also would love to hear from anyone who works at a Nestle plant and can confirm how they are formed. Thanks!
thats a good question. its random, but a good question. i think its because cookies just cook round anyways cause once i tried to make a square cookie and it went circular. Go Figure!
